4th July Cheesecake

Ingredients:

  • 36 g / 3 strawberries
  • 115 g / 3/4 cup Cambrooke Cream Cheese
  • 43 g / 1/3 cup graham cracker crumbs (gluten free)
  • 20 g / 3 blackberries
  • 10 g / 2 Tbs sugar
  • 15 g / 1 Tbs sour cream
  • 15 g / 1 Tbs butter

Directions:

  • Add cracker crumbs to a bowl, melt the butter and mix together
  • Add the mixture to a tin and push down with a spoon
  • Set in the refrigerator
  • Over a medium heat add cream cheese, sour cream, sugar and stir until it softens
  • Whisk until the mixture is thick and creamy
  • Take off heat and leave to cool for 2 minutes
  • Remove dish from refrigerator and pour mixture on top, spread evenly and refrigerate for 1 hour
  • Decorate with strawberries and blackberries for 4th July!
