St. Patrick’s Day Green Pancakes

Ingredients:

  • 1 cup / 100 g Mixquick
  • 2/3 cup / 160 ml water
  • 1 medium / 69 g kiwifruit
  • 1 tbsp / 15 g golden syrup
  • 1 tbsp / 15 g green food coloring

Directions:

  • Combine the Mixquick, water and half of the food coloring.
  • Spoon pancake mixture into a hot frying pan (makes 3 medium pancakes).
  • Fry pancakes for 2-3 minutes on each side.
  • Mix remaining coloring with syrup and pour over pancakes.
  • Top with chopped kiwifruit.
