Thai Curry


  • Low protein veg (we used 30g/1oz cauliflower, 20g/0.7oz bell pepper, 15g/0.6oz mushrooms, 15g/0.6oz green beans)
  • 2 tsp/10g Thai green curry paste
  • 30g/1oz onion, chopped
  • 50g/1.8oz Cambrooke Short Grain Rice 
  • 35g / 1.2oz coconut milk

You will also need 1 tsp. olive oil.


  • Fry onion in 1 tsp. oil until browned
  • Add veg and stir for 5 minutes.
  • Add paste and stir for 1 minute.
  • Add coconut milk and stir for 5 minutes.
  • Serve with Cambrooke Short Grain Rice.
