Fruit Cake

Makes: 16 slices


  • 40g mixed dried fruit
  • 50g dark brown sugar (Muscovado)
  • 1 tsp. pumpkin spice
  • 30g melted butter
  • 1 tbsp. Eggz (mixed with 100ml non dairy creamer)


  • Preheat oven to 375 F.
  • Mix Eggz with non-dairy creamer to make a thick paste.
  • Mix together the Cambrooke Baking Mix, spices and sugar together in a bowl.
  • Once combined, add the Eggz and 1 tbsp water at a time until a thick liquid is formed. Add the fruit and stir so the currants are evenly distributed through the mixture.
  • Spoon mixture into a 25cm x 25cm greased oven dish and cook for 25 minutes. Cook for an extra 5-10 minutes if you prefer the cake to be more golden brown.
