Creamy Coconut Squash Soup

Ingredients: 200g butternut squash 150ml Cambrooke Chicken Consomme 70ml fresh coconut milk 1/2 onion, chopped 1 tsp. mixed spice You will also need 1 tbsp oil, salt & pepper (optional). Method: Microwave butternut squash for 4-5 minutes until cooked through. Fry onion in 1 tsp. oil for 5 minutes. Ingredients: 65g Cambrooke MixQuick 16g instant chocolate fudge pudding mix 2 tsp. canola oil 33g sugar 1/3 cup non-dairy creamer Method: Whisk all ingredients together until smooth.
