Low Protein Rice Pudding (PKU)

Ingredients:

  • 3/4 cup fresh coconut milk (or non dairy milk)
  • 1/2 tsp vanilla extract
  • 1/3 cup Cambrooke Shortgrain Rice
  • 2 tsp sugar
  • 1/2 tsp orange zest

Method:

  • In a saucepan, heat the milk and vanilla over a medium heat.
  • Once the milk starts to steam, add rice and turn up the heat. Stir for 5 minutes then cover.
  • Once cooked, remove from the heat and stir in sugar and orange zest.
  • Enjoy!
