Spiced Carrot and Orange Soup
Ingredients
- 2 small oranges (zested and juiced)
 - 1/2 tbsp olive oil
 - 1 small grated onion
 - 3 1/2 cups grated carrot
 - 1 sliced/deseeded red chilli
 - 2 tsp Cambrooke Chicken Consommé (mixed with 2 cups boiling water)
 
Directions:
- Heat oil in saucepan. add onion, carrot and chilli.
 - Cover and heat for 5 minutes. Pour in consommé and simmer for 10 minutes.
 - Add orange juice and zest. Cool and blend.
