Low Protein Tomato Risotto (PKU)

Ingredients:

  • 1/2 cup Cambrooke Shortgrain Rice
  • 1/3 tin (150g) chopped tomatoes
  • 1/4 onion (chopped)
  • 150ml Cambrooke Chicken Consommé (1 tsp Consommé powder+water)
  • 5 cherry tomatoes
  • 1/2 tbsp butter

Directions:

  • Tip butter, rice and onion in dish.
  • Cover and microwave for 1-2 minutes.
  • Then mix in the consommé and chopped tomatoes.
  • Microwave for 5 minutes (checking and stirring it every 1-2 mins).
  • Then add cherry tomatoes.
  • Cook for further 5 mins until rice is cooked.
  • Cool and add butter.
  • Season to taste.
