Fruit Cupcakes
Ingredients:
- 1 tsp baking powder
 - 5 tbsp/ 70g melted butter
 - 2 tbsp water
 - 1 cup/ 110g Wel-made Baking Mix or Baking Mix
 - 1 cup/ 110g white sugar
 - 1/3 cup / 70ml rice milk
 - 2 tsp food colouring – any colour
 
Method:
- Preheat oven to 350F.
 - Cream the butter and sugar. Add baking powder and baking mix and combine.
 - Gradually add milk and water and combine until creamy and smooth.
 - Add food coloring.
 - Line the cupcake tray and spoon 2 tbsp mixture into each case.
 - Makes 6 cupcakes or 8-12 small.
 - Bake for 15-20 minutes at 350F.
 
To Decorate
Ingredients:
- 1 sliced kiwi
 - 2 sliced strawberries
 - 1 tbsp/ 14g melted butter
 - 15 tbsp/ 120g icing sugar
 - 1 tsp food colouring
 
Method:
- Gradually mix melted butter into the sugar.
 - Stir in food colouring.
 - Ice the cupcakes.
 - Add fruit.
