{"id":1823,"date":"2020-05-01T08:55:27","date_gmt":"2020-05-01T08:55:27","guid":{"rendered":"https:\/\/www.cambrooke.com\/blog\/?p=1823"},"modified":"2020-05-01T08:55:27","modified_gmt":"2020-05-01T08:55:27","slug":"lasagne","status":"publish","type":"post","link":"https:\/\/www.cambrooke.com\/blog\/2020\/05\/lasagne\/","title":{"rendered":"Lasagne"},"content":{"rendered":"<p>Perfect for batch cooking and freezing!<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>Rind of 1\/2 lemon<\/li>\n<li>2 cloves \/ 6 g garlic<\/li>\n<li>1 tbsp \/ 15 g olive oil<\/li>\n<li>1 tsp \/ 3 g balsamic vinegar<\/li>\n<li>1 tsp \/ 3 g mixed herbs<\/li>\n<li>1 cubed \/ 300 g eggplant<\/li>\n<li>1 diced \/ 100 g red onion<\/li>\n<li>1 1\/2 cubed \/ 250 g zucchini<\/li>\n<li>1 1\/2 diced \/ 170 g red bell peppers<\/li>\n<li>3 chopped \/ 350 g tomatoes<\/li>\n<li>400 g tin tomatoes<\/li>\n<li>1\/2 tsp \/ 3 g english mustard<\/li>\n<li>3.5 tbsp \/ 50 g butter<\/li>\n<li>0.3 cup \/ 40 g <a href=\"https:\/\/store.nexternal.com\/cbfi2000\/wel-made-baking-mix-p985.aspx#.Xqvj3pNKjBI\">Wel-made Baking Mix<\/a><\/li>\n<li>500 ml \/ 16.7 fluid oz rice milk<\/li>\n<li>6 low protein lasagne sheets<\/li>\n<li>200 g <a href=\"https:\/\/store.nexternal.com\/cbfi2000\/mozzarella-shreds-p52.aspx#.Xqvjt5NKjBI\">Mozzarella Shreds<\/a><\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<p>For the filling:<\/p>\n<ul>\n<li>Heat oil in pan<\/li>\n<li>Add red bell peppers, eggplant, zucchini and stir for 5-10 minutes until soft or golden brown<\/li>\n<li>Take off heat and set to one side<\/li>\n<li>Add more olive oil if needed and then add red onion, garlic and mixed herbs<\/li>\n<li>Fry until soft or golden brown<\/li>\n<li>Add the cooked vegetables along with the chopped tomatoes, tinned tomatoes and balsamic vinegar<\/li>\n<li>Season and simmer for 30-35 minutes<\/li>\n<li>Grate the rind of half a lemon<\/li>\n<li>Mash or roughly pulse the vegetables<\/li>\n<\/ul>\n<p>For the white sauce:<\/p>\n<ul>\n<li>Add butter to the pan and melt<\/li>\n<li>Add <a href=\"https:\/\/store.nexternal.com\/cbfi2000\/wel-made-baking-mix-p985.aspx#.Xqvj3pNKjBI\">Wel-made baking mix<\/a> and mix together<\/li>\n<li>Gradually add rice milk and stir and simmer for 8-10 minutes until thick and creamy<\/li>\n<\/ul>\n<p>Assemble the lasagne:<\/p>\n<ul>\n<li>Layer 1: Vegetables<\/li>\n<li>Layer 2: Low protein lasagne sheets<\/li>\n<li>Layer 3: White Sauce<\/li>\n<li>Layer 4: <a href=\"https:\/\/store.nexternal.com\/cbfi2000\/mozzarella-shreds-p52.aspx#.Xqvjt5NKjBI\">Mozzarella Shreds<\/a><\/li>\n<li>And repeat<\/li>\n<li>Bake for 30 minutes at 390F<\/li>\n<li>Eat straight away or freeze for 1 month<\/li>\n<\/ul>\n<p><strong>Makes: 8<\/strong><\/p>\n<p><strong>Nutritional Information:<\/strong><\/p>\n<ul>\n<li><strong>Calories: <\/strong>221\u00a0kcals<\/li>\n<li><strong>Phe:\u00a0<\/strong>132 mg<\/li>\n<li><strong>Protein:\u00a0<\/strong>3\u00a0g<\/li>\n<\/ul>\n<p><iframe loading=\"lazy\" title=\"Lasagne\" width=\"1140\" height=\"641\" src=\"https:\/\/www.youtube.com\/embed\/QY_3os3-JUs?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Perfect for batch cooking and freezing!
