{"id":1771,"date":"2020-03-27T16:41:49","date_gmt":"2020-03-27T16:41:49","guid":{"rendered":"https:\/\/www.cambrooke.com\/blog\/?p=1771"},"modified":"2020-03-27T17:21:40","modified_gmt":"2020-03-27T17:21:40","slug":"curried-pumpkin-fritter","status":"publish","type":"post","link":"https:\/\/www.cambrooke.com\/blog\/2020\/03\/curried-pumpkin-fritter\/","title":{"rendered":"Curried Pumpkin Fritter"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1\/4 cup \/ 40 g onion, thinly sliced<\/li>\n<li>1 tsp \/ 2 g curry powder<\/li>\n<li>1 1\/2 cups \/ 174 g pumpkin, chopped into small chunks<\/li>\n<li>1 tbsp \/ 9 g chili pepper (sliced)<\/li>\n<li>2-3 sprigs cilantro<\/li>\n<li>1\/2 tbsp \/ 7 g coconut oil<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ul>\n<li>In a large bowl, microwave the pumpkin for 4-5 minutes until cooked through. Then mash with a fork.<\/li>\n<li>In a frying pan, saut\u00e9 the onion with the oil on a medium heat until lightly browned. Add the onion to the pumpkin.<\/li>\n<li>Add chili, cilantro and curry to the pumpkin and onions and stir well. Cool slightly.<\/li>\n<li>Press into a patty and add baking mix if needed.<\/li>\n<li>Fry on both sides for several minutes.
