{"id":1562,"date":"2019-11-14T18:19:08","date_gmt":"2019-11-14T18:19:08","guid":{"rendered":"https:\/\/www.cambrooke.com\/blog\/?p=1562"},"modified":"2019-11-14T18:20:31","modified_gmt":"2019-11-14T18:20:31","slug":"asian-eggplant","status":"publish","type":"post","link":"https:\/\/www.cambrooke.com\/blog\/2019\/11\/asian-eggplant\/","title":{"rendered":"Asian Eggplant"},"content":{"rendered":"<p><strong>Serves:\u00a0<\/strong>1 person<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>\n<div>2 cups chopped eggplant<\/div>\n<\/li>\n<li>\n<div>1 chopped red chilli<\/div>\n<\/li>\n<li>\n<div>1 tbsp. soy sauce<\/div>\n<\/li>\n<li>\n<div>\u00bd tsp. ginger paste (or fresh grated ginger) and \u00bd tsp. lemongrass paste (or sauce)<\/div>\n<\/li>\n<li>\n<div>1 tsp. sugar<\/div>\n<\/li>\n<\/ul>\n<p>For this recipe, you will also need 1 tbsp. olive oil.<\/p>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>In a large bowl, mix together the eggplant, red chilli, soy sauce, ginger\/lemongrass paste and sugar.<\/li>\n<li>Once the eggplant is completely coated, cover and microwave for 10 minutes, stirring half way through.<\/li>\n<li>Fry 1 tbsp. olive oil in a frying pan on a high heat.
