Spiced Carrot and Orange Soup

Ingredients

  • 2 small oranges (zested and juiced)
  • 1/2 tbsp olive oil
  • 1 small grated onion
  • 3 1/2 cups grated carrot
  • 1 sliced/deseeded red chilli
  • 2 tsp Cambrooke Chicken Consommé (mixed with 2 cups boiling water)

Directions:

  • Heat oil in saucepan. add onion, carrot and chilli.
  • Cover and heat for 5 minutes. Pour in consommé and simmer for 10 minutes.
  • Add orange juice and zest. Cool and blend.
