  • 1 cup (145g) Cambrooke MixQuick, firmly packed
  • 2 Tbs sugar
  • ½ cup water
  • ½ tsp vanilla
  • 8 (80g) strawberries
  • 1 cup non-dairy whipped cream
  • Heat oven to 350 degrees F.
  • Stir together the MixQuick, sugar, water, and vanilla until smooth.
  • Pour into 4 greased muffin tins and bake for 12 to 15 minutes, until golden brown. Cool.
  • Split the shortcakes in half.
  • Fill and top with strawberries and non-dairy whipped cream.
